consider the case when the blood cholesterol level is too high. This
is naturally related to nutrition. The presence of cholesterol in the
body depends on consumption of foods such as egg yolks, offal (liver,
kidney, brains), beef, lamb, pork and other meat products). Vegetable
products do not contain cholesterol at all. Each American uses about
450 mg of cholesterol (by the way, one egg contains an average of 250
mg cholesterol). According to scientists, reducing cholesterol consumption
to 300 mg per day may already have preventive value. There are also indications
of the desirability of reducing calories. And use vitamins as much as
possible. Low fat diet with low cholesterol content is vegetarian’s
way of life. The level of cholesterol in the blood of vegetarians does
not constitute a risk of heart disease. Therefore, the presence of coronary
disease is extremely rare in such groups. The major components of vegetarian foods that reduce cholesterol levels are polyunsaturated fatty acids and dietary fiber. They include linoleic, linolenic and arachidonic acid. A rich source of linoleic acid (50%) is vegetable oils, whereas in animal fats you can find only 5 to 15%. The most metabolically active arachidonic acid is formed from linoleic acid in the body. Man’s need in polyunsaturated fatty acids is 10-15 g, so it is recommended to include not less than 20 g of vegetable oil into food. Vegetable oils also contain plant sterols, which have the ability to stop the absorption of incoming food-cholesterol from the intestine into the blood. The dietary fibers are also important for organism (cellulose, gimetsellyuloza, lignin, pectin). Cellulose is the main component of plant cell walls and makes them a mechanical basis. The splitting of cellulose is caused by a range of enzymes, which are not synthesized by the digestive organs of a man. Dietary fiber plays an essential role in the normalization of a number of physiological functions and metabolic processes. They extract excess cholesterol from the body. A man, who takes the raw vegetable diet, gets more than 60 grams of dietary fiber a day. In addition, lower cholesterol levels can be obtained by using vegetable protein (more precisely their amino acid composition). |
